How to select an excellent one ?
If you want to eat cold and crisp lotus root,
choose the 3rd and 4th sections near the germination point( normally this is for stir salad );
if you like softness, choose the 1st and 2nd sections near the root ( normally this is for soup).
Note : if you can not identify which is 1st, 4th .....
any part will do. Just cook it 😆😍

Dark center hole means stale.
The lotus root has been out of the water for more than 4 days. When the hole in the center turns black when cut, it is not fresh. It is best to cook it within 3 days to maintain freshness, otherwise the lotus root will start to rot on the 7th day.
Slice and freeze
within 3 days for freshness.
If the lotus root you bought cannot be eaten up quickly, you can boil and freeze the lotus root within 3 days, and reheat it when you want to eat it. Or buy it and wash it, then slice it and freeze it. When it’s time to cook, you don’t need to thaw it, just put it in water to make soup or scald it for cold dressing, it won’t affect the taste.
Recipe ~
Lotus Roots + Peanuts + Shiitake Mushroom
+ Vegan meat or Rib = Soup
Materials :
Fresh raw Lotus Roots
( 1st, 2nd or the whole section )
Dried raw Peanuts ( soak before cook )
Dried or Fresh Taiwan Shiitake Mushrooms
( if dried type, must soak before cook )
Dried Red dates ( soak before cook )
Old Ginger
Fresh Green Coriander
Scallion ( optional )

Soak dried peanuts / mushrooms / red dates
in cold water till soft and clean them all entirely :
< for Meat eater > : + rib ( pork )
< for Vegan > : delete rib

Peel off the Lotus Roots skin :
Clean all materials till satisfied :
Add proper Filtered Clean Water Boiled.
Turn the heat to small fire
( but must still remain the boiled status )
Cook till Lotus Roots and Peanuts are crisp tender,
that normally means
all materials are well cooked.
( Usually 60minutes / 1hour or so )
Add a bit " salt ".
Finished.

< TIP > I only add salt.
Do NOT recommend
too much other seasoning.
The original flavor is the best.

because of oxidation
