Mullet (Mugilcephalus), also known as mullet, 

is a seasonal migratory fish distributed in tropical,

subtropical and temperate seas. The mullet roe

 made from the ovary of the female fish has

 extremely high nutritional value and can be called

 the best in fish roe. There is only one pair of

 ovaries in each female crow to make mullet roe.

In addition, the swim bladder is also widely

 welcomed by the public. 

Fishermen bring generous year-end bonuses, so the mullet is also known as the "black gold" in the sea.

Mullet Roe Nutrition

Contains vitamins A, B group, E, copper and zinc,

 protein and lipids. Proteins contain all kinds of

 essential amino acids, and lipids contain a lot of

 highly unsaturated fatty acids such as EPA and

 DHA.


From November to late January of the following year, natural mullet will migrate southward from the East China Sea to spawn in the waters of southwestern Taiwan following the 19-21 ℃ isotherm of the coastal waters of the mainland.

 Over the years, the breeding technology has

 improved, and the processing process has been

 continuously improved, making the quality

Available packaging in the current market :

A.  Two pieces vacuum packed 

   ( the raw ones are only dried under the sun 

     and needed to be reprocessed/toasted further )


   The cooking method is as follows :


Scissors cuts off the pedicle 👇

Hands apart it into 2 pieces  : 

Peel off the outer Adventitia :

( 👩  I suggest to put on the disposable plastic gloves
         in order to avoid the fishy smell 
         stained on your fingers )

  Soak 2 piece of mullet roe 

   in white wine for about 5 minutes,  

  this step adds moistness and

  bouquet.


  Saute in a pan  ~ 

   Heat a very little bit oil in a pan over high heat,

   Saute on both sides until golden .

  (    Tips :   one side fries 30 seconds, 

                   2 sides totally about 60 seconds )


After finishing, slice it when it is in " warm " status.

Tips : if hot, your fingers hurt.

          if cold, the mullet roe will be broken.

          so slice it when it in the warm status.

After slicing, 

Serve with (green) garlic, white radish or apple slices, pear slices for a delicate taste

Note  :  
Personally I prefer to buy raw/sun dried mullet roe ( type A ) and saute it by pan at home.  
Its taste is more fragrant.

Mullet roe is a significant dish at either wedding part banquet
or lunar new year holiday
in Taiwan.  We share this dish while family members gather together.
Do not eat it up all by yourself at a time.
You will feel too much in your belly.
