Flavor Salty Eggs
Use raw Duck eggs or Chicken eggs to make it. ( Both are O.K. ) ππ✌
Recipe :
Filtered water 2000g
Harsh salt ( or general salt ) 400g
Fresh Garlic ( chopped )
Rice Wine or White Wine 100g
EGGS (Chicken eggs or Duck eggs )
Glass Jar
<P.S.> I always like to make both eggs
mixed in the glass jar at a time.
Because my family love to taste
2 flavors in a meal.

Handling Process ~
1) Wash the eggs cleanly.
Put the cleaned eggs aside till
entirely the eggs' shell DRY
( without damp/water ).
2) Boil the water + harsh salt
After competely salt dissolved
and boiled ( must boil ).
Turn off fire and wait till the salty
water ( brine ) wholly COOL.
( after boiled,
put it aside
till it naturally cool )
and put it be DRY status also.
4) A bowl of rice wine/white wine
( 100g ).
Rolling the dry shell egg
( one by one ) in the white wine to
kill bacteria. ππ
It's very indispensable process
to assure eggs' cleanness.

5) Put the eggs into the glass jar
( must ONE BY ONE )
LEST broken.
6) Pour the rest White wine
into glass jar .
7) Put into some cleaned
and dry off status Garlic
( Chops )( not wet ).
8) Pour in cool brine ( already boiled )
9) If there is still space left,
Put a small plate into the top
of glass jar in order to keep
the eggs submerged.
10) Seal the jar cover.
11) Glue a note with DATE begins.
I ALWAYS like to put in MIXED 2 kinds of eggs in order to gain different taste.
NOTE :
25 days chicken eggs are already Salty.
30 days duck eggs salty.
30~40 days Oily Yolk.

More than 45 days
eggs become much more salty

I get used to steam or water boil the
salty eggs within 25 days ~ 45 days.
Do NOT exceed 45 days. ππππ
( ~ Taste salty chicken eggs firstly ~)
<p.s.> Brine can be used at next time.
Reboil it and replenish more salt
and water.
<p.s.> Or you may give it up.
Prepare ALL new.
